During Franco\u2019s regime the Basque country\u2019s gastronomic\u00a0societies were one of the few remaining places where the\u00a0Basques could practice their culture. Today the region\u2019s\u00a0cuisine is one of the best in the world.<\/p>\n
It is the story of the political and cultural struggle for selfassertion\u00a0of the people in this region. At the time of Francofascism,\u00a0the use of their language and the practice of their\u00a0traditions were largely forbidden. But what Franco could\u00a0not forbid was cooking and eating. And this is how they\u00a0developed the highest level of culinary refinement.<\/p>\n
\u201eTxokos\u201c is how the Basques call their cooking cooperatives.\u00a0There are hundreds of them in and around San Sebasti\u00e1n.\u00a0They are unique in the world and have decisively shaped\u00a0the society, culture and politics of the Basque Country in a\u00a0self-confident, defiant and at the same time subtle way. A\u00a0society that is difficult to understand for outsiders: always\u00a0in a party mood, humorous and exceedingly hospitable.\u00a0But at the same time they are capable to argue about\u00a0everything at any time. From the right to self-determination\u00a0of the people to the only true and correct way of preparing\u00a0a tuna potato stew Marmitako.<\/p>\n
